
When opening olives or gherkins, many people pour the liquid straight down the sink. With fermented vegetables, however, this is the active brine in which the transformation has taken place over several weeks.
Fermentierra’s dense ferments sometimes leave a surplus of this valuable liquid. Rather than waste it, we bottle it as Symbiotonic – a name bringing together symbiosis and tonic.
What is in this elixir?
- Free lactic-acid bacteria: Many of the ferment’s microorganisms are present in the liquid. Their species, number and survival until consumption may vary by batch and storage.
- Salts and minerals: The brine contains electrolytes and salt from Bex. It is salty and should be portioned accordingly; it is not a medical rehydration product.
Two versions
Both are filtered, unaltered juices from our signature recipes.
Symbiotonic “Shanti” – red cabbage and spices
A deep, warming elixir in which cardamom and cinnamon perfume the red-cabbage juice.
Symbiotonic “Kvas” – beetroot and ginger
A lively drink inspired by Slavic tradition. Earthy beetroot meets turmeric and ginger.
The Symbiotonic ritual
This powerful, salty drink is not consumed like a fizzy drink, but enjoyed in a small serving:
- In the morning: A small shot after water, if the flavour and salt content suit you.
- During exercise: Dilute a shot in a bottle of water. For medically significant fluid or electrolyte loss, use a product formulated for that purpose.
- After a rich meal: Some people enjoy the acidity as a lively finish; it is not a treatment for nausea.
