Purple Sunshine Drink

A refined and refreshing alcohol-free cocktail with herbal tea, preserved lemon, blueberries, rosemary and coconut water.

Purple Sunshine Drink

A delicious, alcohol-free and wonderfully refreshing cocktail created by the inspired @lovleyfoody. Sauerkraut never ceases to surprise us!

Preparation time: 15 minutes
One hour beforehand: brew the tea and leave it to cool.

Ingredients: Fermentierra Rayon de Soleil herbal tea and preserved lemon, blueberries, rosemary, coconut water, fresh lemon, ice cubes, sweetener of your choice, desiccated coconut and water.

Serves two

Bring some water to the boil. Pour it over the Rayon de Soleil tea, leave to infuse for a few minutes and allow it to cool.

  • 2–3 small pieces of preserved lemon
  • ¼ fresh lemon, cut into small pieces
  • 1 handful of blueberries. For a deeper purple colour, briefly boil the berries with 1 tablespoon of water.
  • 1 sprig of rosemary
  • 1 teaspoon of your preferred sweetener, such as cane sugar
  • 200ml coconut water

Crush and mix everything so that the flavours come together.

Pour one tablespoon of preserved-lemon juice into a small dish. Dip the rims of both glasses about 5mm into the juice, then coat them in desiccated coconut.

Add the remaining lemon juice to the blueberry and lemon mixture.

Fill both glasses two-thirds full with ice.

Strain the blueberry, lemon and coconut mixture and divide it between the glasses.

Carefully pour in the cooled Rayon de Soleil tea.

Garnish with fresh lemon, blueberries and a sprig of rosemary.
